Good Morning Readers,
There is a percentage of the population who love their traditional Christmas Cakes. Swamped with fruit and nuts and served with cream or ice cream, warmed to perfection with perhaps a touch of whiskey in the sauce.
Our family have gone away from this tradition. We of the different nationalities have made it a rule. No heavy- can’t have an afternoon sleep type Christmas Cake. In the southern hemisphere we have taken to a lighter meal for Christmas. And, one of these is the Yule Log. I make it every year and this year it will be longer in length, because we are visiting friends. The origin of the Yule Log is believed to have been derived from the old custom of sending a log to the house to which you were invited on Christmas Eve, so you could be sure to enjoy Christmas dinner before a roaring fire.
It involves time and a little patience. Decorate the finished product with bits and pieces from your Christmas decoration box. I hunt around for ages before I change my mind and add even more decoration.
I haven’t written out the recipe here, but you can find variations on a theme if you ‘google’ Yule log recipes. There are plenty around. Preparation and cooking time is about 1 hour. My recipe comes from one of my ancient cookbooks- ‘The Complete Margaret Fulton Cookbook.'
